Who doesn’t love chicken, all meat lovers first choice and second choice would be another chicken. This blog will be an answer to all those who keep asking me each time after reading my blog post or watching my cooking videos - Why do you use chicken masala powder? 

My challenge is to cook a dish without chicken masala powder. I felt really great after cooking this one-pot meal without the use of chicken masala powder still, the recipe tastes great. 

Every non-vegetarian recipe calls for a number of spices, don’t worry in this case you don’t need to raid your cupboard or rush to the grocery store, we will do this without them, as the title says “Try now chicken recipe without chicken masala”. Let’s get to cook now.

Cooking time - 30 min
Serves 4

Ingredients required

Chicken with skin cut on the bone - 500 gms

Red onion’s - 100 gms

Tomatoes - 100 gms

Green chillies - 2 pcs

Red chilli paste - 1 tablespoon

Ginger garlic paste - 3 tablespoon

Red chilli powder homemade - 1 tablespoon

Turmeric powder - ½ teaspoon

Yoghurt  - 1 tablespoon

Curry leaves

Coriander leaves

Cooking oil - 4 tablespoons

Salt as required

**Indian spice not required

Preparation method

Use a manual grater to grate the onions, this adds to the consistency to the gravy rather slicing them. Chop the tomatoes into large pieces or use tomato puree and slit the green chillies lengthwise.

For the grinding I would recommend using a mortar and pestle as this is the traditional way preparations were done back in the days, which adds taste by not heating the ingredients, thereby losing their actual flavours.

For the ginger-garlic paste take equal portions of fresh ginger, garlic and make a fine paste.
For the red chilli paste soak 3 to 4 red chillies in hot water for 2 to 5 mins, make a fine paste, by draining off the water.

The trick to making a fine paste is to add a pinch of salt while grinding

Clean and wash the chicken well, place it in a colander to drain off any excess water. Trim off any excess fat, Chop them into bite-size pieces - morsels, about ½ an inch wide

Cooking procedure recipe without chicken masala powder

Heat oil in a large skillet in high flame, saute green chillies, grated onions and season with salt. Simmer the flame and saute until the onions turn golden. Add largely chopped tomatoes to the same pan and saute. Cover and continue to cook at a simmer for 3 mins.

Now its time to add turmeric powder and ginger garlic paste. Cook, until the raw flavours of the are gone by then the tomatoes would have been fully cooked. Perfect time to add the red chilli paste, yoghurt and curry leaves saute well until the mixture starts moves freely in the pan.

Once you start to see the oil separating on the sides of the pan, add the washed chicken to the same pan. Mix well and cook covered for further 2 mins, give it a good stir to mix it with the other ingredients as they may tend to get burned at the bottom. Stir, cover and cook every  2 mins, repeat for 2 or 3 more times.

Watch for the oil to separate from the chicken, add red chilli powder and mix well, cook covered for 2 mins. Stir, cover and cook every  2 mins, repeat for 2 or 3 more times.at low flame.

As this chicken curry recipe is cooked without chicken masala, we have preferred chicken with skin, allowing the chicken to cook in its own fats and the juices along with the juices of onion, tomatoes etc., and will not be adding any water to this dish.

For the garnish add chopped coriander leaves to the pan of chicken, give it a stir and turn off the flame.
A recipe without chicken masala powder is also called chicken curry recipe which is now ready to serve. Tastes great with hot phulka and steamed rice.

Which is better chicken tikka masala or butter chicken?

Both the dishes are out of the world and there is no comparison between the two. Chicken tikka masala is spicier and more intensely flavoured. Butter chicken is the main course dish which uses butter instead of oil while cooking. There are many variations of both these dishes.
